Tuyo Pasta

Tuyo Pasta

I’m more of a sweet tooth person so I prefer baking or doing homemade fridge cakes but now, I’m taking my kitchen skills to new heights! I’m starting with one of the pasta dishes I’ve tried so far: the tuyo pasta.

I love tuyo and that’s a fact. I can even eat a piece of it with three cups of rice! Carbs, carbs, carbs! But I don’t care. 🙂 It tastes really good, it should have been illegal but thankfully it is not. So with this love I have for tuyo, I thought, why not make a pasta version of it? So here it is!

Serving: 3
Preparation and Cooking Time: less than 30 minutes

Ingredients:
250 grams cooked spaghetti
5 cloves chopped garlic
1/4 cup olive oil
2/3 cup chopped tomatoes
3 tbsp. sliced black olives
3 tbsp. sliced capers
6 pcs. snipped spicy tuyo in bottle
salt and pepper to taste

For the garnish:
kesong puti slices (optional)
2 pcs. spicy tuyo in bottle
oregano

olives capers tuyo pasta

Instructions:

1. Sauté garlic in olive oil. Add tomatoes and cook until soft. Add the rest of the ingredients and sprinkle with salt and pepper to taste.

2. Toss in the cooked pasta.

3. Drizzle with olive oil and top with tuyo and dried oregano.

4. Serve.

Substitute ideas: Spanish sardines in place of tuyo and parmesan cheese for kesong puti. For this version, I didn’t put any cheese since I like the saltiness of the fish just right. Oh, you can also add grilled eggplants to this recipe, if you want. Just slice it to bits.

Let me know if you tried it. 🙂
